Thanksgiving Day Meal

Because of the meal last night, we made it simple tonight.

I finally got fresh ginger and cardamom! I made chai lattes!


3 coins of smashed ginger

8 black tea bags

1 tsp orange zest

1 cinnamon stick (broken)

pinch of anise seeds (or one star)

1Tbs honey

1 Tbs vanilla extract

1/2 tsp mace

1/2 tsp ground nutmeg

7 (slightly opened) green cardamom pods

10 whole cloves

a couple of shakes of black pepper

2/3 cup brown sugar

Throw everything in a french press.

Boil 4 1/2 cups of water.

Let seep in the press for 20-25 minutes.

Serve with 1 part concentrate and 1 part milk.

Time for dinner!

[[Crepes with apple, bacon, and brie]]

• 1 Granny Smith apple, thinly sliced 
• 4 teaspoons extra-virgin olive oil 
• 4 crepes
• 8 ounces brie cheese, sliced 
• 1 tablespoon maple syrup 
• 2 strips bacon, cooked

Saute the  apples in the olive oil.

Lay the crepes on a cutting board. Top each with one-quarter each of the grilled apple, brie, and a slice of bacon.

Fold in half.
Heat the remaining 2 teaspoons olive oil in a large nonstick skillet over medium heat.

Working in batches, cook the crepes until golden brown and the cheese melts, about 2 minutes per side.

Drizzle with maple syrup.
